What's the brand/manufacturer? (Need to confirm so we can get the right manual. Check the nameplate – is it La Marzocco? Something else?)
Please review the Espresso Cleaning SOP – I finished writing it up from your notes. Check that the steps are correct, especially Step 4 (rinse backflush) and portafilter storage.
How often does the group head gasket get a deep clean vs. just the daily Cafiza procedure?
Any weekly or monthly maintenance you're already doing on it?

What time does the opener arrive vs. when doors open?

Hot water dispenser: turn off at close, or leave on overnight?
Shift-to-shift communication: if something breaks or runs low at close, how should we flag it for the opener? (Whiteboard? Slack? SpotOn note? Paper log?)
